Technically speaking there is very little preparation time needed. Your event is immediately live when you publish it. Organisationally speaking we recommend taking two - four weeks.

Can I up- or downgrade my event capacity (=quoted pricing) when it turns out that more or fewer people are attending?

Yes, in the blink of an eye. Even on short notice that's no problem. MeetAnyway's Fair Billing Policy additionally gives you a 10% goodwill buffer to go overcapacity with no extra charge.
